Here in the Rococo Kitchen, we can feel the days drawing shorter, and the nights growing longer.

When the temperature drops, there is nothing like a cup of our delicious 65% hot chocolate to warm the soul. Better yet, is when you have some delicious marshmallows to melt in it. A true throwback to our childhood.

Ingredients:

  • 30ml tablespoons gelatin
  • 180ml cup water
  • 120ml cup cold water
  • Pinch salt
  • 400g white sugar
  • 1 teaspoon vanilla
  • Powdered sugar

 

Directions:

  1. Soak gelatin in 120ml cold water.
  2. Heat sugar in 180ml water until dissolved.
  3. Add gelatin to syrup and bring to boil.
  4. Take off stove, let stand until partially cool. (To cool rapidly, put saucepan in cold water.)
  5. Add salt and flavoring.
  6. Beat with electric mixer until stiff.
  7. Dust pan with powdered sugar and pour in 1 cm deep.
  8. When set, cut into squares with a knife dipped into cold water.

Eat as they are coat in tempered dark chocolates, or add to a steaming cup of hot chocolate!
