Wow! I’m so glad I followed my gut and purchased the Honduras 70%! I knew it’d be great, and while nibbling the bar, I found myself correct. You’ll notice the list of notes that make up the flavor profile of this single origin dark chocolate. The sum of its parts is a not-too-tart or too sweet, natural tasting, bright raspberry simulation. The immediate thought that springs to my mind is to pair this one with the Violet bar, since raspberry is a no-brainer fruit accompaniment to the Violet flower. If you’re like me and love Rococo’s fruity Grenada sourced chocolate on its own, you’ll be sure to love the Honduras almost as much. (As a side note, I sampled Peru and Costa Rica sourced chocolates elsewhere, and passed on purchasing Rococo’s, since the flavor profile of these is not especially suited to my tastes; it must be their shared lemony, leafy bite. The inherent sharpness of these nuances don’t appeal, whether it’s chocolate or beer, etc. ) I also purchased Rococo’s single origin Vietnamese bar, but was too overwhelmed by its harshness at an intense 100% to type up a review. Instead, I’m leaving the reader with my 5 Star impressions.
