2. Trinitario

Trinitario is a hybrid variety that emerged in Trinidad in the 18th century, a cross between the hardy Forastero and the delicate Criollo beans. This variety combines the best of both worlds, offering disease resistance and superior flavour.

Taste Profile: Trinitario beans provide a harmonious balance of flavour, with notes of fruitiness, acidity, and a hint of bitterness. This complexity makes them highly prized in the world of fine chocolates.

Regions: Trinitario cocoa is grown in the Caribbean, Venezuela, and regions of Southeast Asia, including Sri Lanka and Papua New Guinea.

3. Nacional

Nacional cocoa, often referred to as Arriba, is native to Ecuador and is renowned for its unique floral and fruity notes. This rare variety is cherished for its complex and nuanced flavour profile.

Regions: Nacional cocoa is predominantly grown in Ecuador, with some cultivation in Peru and Colombia.

4. Criollo
